Berry Chia Coconut Porridge

Why I love it:

This is the ultimate portable brekkie for when you are in a hurry, made the night before and stored in the fridge.  I usually make it when I've got left over coconut milk from a curry or something.

It's full of protein and good fats , especially omega 3's, and contains a wealth of vitamins and minerals to kick your day off and keep you full 'till lunch.

Ingredients:

  • 1/3 cup oats
  • 1 tbls chia seeds
  • 1/2 cup coconut milk
  • 1 tbls frozen raspberries (or your preferred fruit)
  • Fresh blueberries
  • Pistachios and flax seeds to garnish

What to do:

  1. Mix together the oats, chia and coconut milk
  2. Stir in the frozen berries
  3. Put into the container you want to take with you in the morning!
  4. Top with blueberries, nuts and seeds
  5. Leave in the fridge overnight or until you are ready to eat
